Cauliflower Rice and Beans

1 C. Cauliflower, grated or riced

1 Ideal Protein Vegetable Chili Mix

1/2 C. Red Bell Pepper, chopped

1/4 C. Green Bell Pepper, chopped

1/4 C. Yellow Bell Pepper, chopped

Fresh Cilantro (optional)

1/2 C. low sodium, fat-free Beef Broth

1/2 tsp. Garlic Powder

1/4 tsp. Sea Salt


Chop the peppers into little squares (as small as you can).

Cook the cauliflower in a pain with the beef broth, until the broth is completely absorbed.

Mix in the bell peppers, garlic powder, sea salt and pinch of cilantro.

Add in the IP Vegetable Chili Mix.

Cook for 3-5 minutes, stirring constantly, mixing all the ingredients well – until the cauliflower looks dry like rice.

Serve and enjoy.
