- 2-4 Zucchini (peeled, cut into small chunks), makes roughly 3 cups
- 1 Tbsp. Extra Virgin Olive Oil
- 1 Tbsp. Lemon Juice
- 1 C. Fresh Salsa or Fresh Pico da Gallo (no sugar added)
- Optional: 1/4 tsp. Cayenne Pepper
- Pulse all ingredients except salsa in blender (Tip: blend one cup of zucchini at a time to keep from becoming too liquid).
- Add the fresh salsa into the zucchini and stir.
This recipe makes 4 cups of P1 veggies! Serve with cucumbers or your favorite Ideal Protein chips.
