Zucchini Pico Hummus Dip

:: Ingredients
  • 2-4 Zucchini (peeled, cut into small chunks), makes roughly 3 cups
  • 1 Tbsp. Extra Virgin Olive Oil
  • 1 Tbsp. Lemon Juice
  • 1 C. Fresh Salsa or Fresh Pico da Gallo (no sugar added)
  • Optional: 1/4 tsp. Cayenne Pepper
:: Directions
  1. Pulse all ingredients except salsa in blender (Tip: blend one cup of zucchini at a time to keep from becoming too liquid).
  2. Add the fresh salsa into the zucchini and stir.

 
This recipe makes 4 cups of P1 veggies! Serve with cucumbers or your favorite Ideal Protein chips.
