Mayonnaise (from scratch)

Servings: 3 (counts as 2 servings of olive oil)


1 large Egg

1/4 of an Egg Yolk

2 Tbsp. EVOO

2 tsp. Lemon Juice

1/2 tsp. Yellow Mustard

1/8 tsp. Sea Salt


Pour the egg white, 1/4 of a yolk, lemon juice, yellow mustard. sea salt and ONE tablespoon of EVOO into a blender or Magic Bullet.

Pulse quickly for 4-5 short bursts until it starts to turn white.

Pulse for an additional 10 seconds, stop, and then add the second tablespoon of EVOO.

Pulse for another 10 seconds, or until creamy.

Separate into 3 portions and save in an air tight container.
