Mushroom & Parmesan Chicken
4-6 oz. of Chicken Breast, cut in slices
1 Ideal Protein Mushroom & Parmesan Couscous Risotto
Pinch of Garlic Powder
1 3/4 C. of Zucchini Noodles
1/4 C. of Mushrooms
Sea Salt and Pepper, to taste
Rub the chicken with a little olive oil (1 teaspoon should do the trick for a pound or so), salt and pepper.
Heat a medium skillet over medium heat, lightly spray PAM and place sliced chicken pieces into the skillet. Cook until edges are opaque, about 10 minutes.
Mix the Ideal Protein Mushroom & Parmesan Couscous Risotto as directed and add to the pan. Mix in well, add the mushrooms and set aside.
In the same pan, cook the zucchini noodles for 30 seconds to a minute, making sure you don’t overcook them/ melt them.
